Inside a Bean Burrito Bake

So remember when my our friends were supposed to come over and have “Chicken Cream Cheese Green Enchilada Quinoa Bake” with us and the hubs got sick and their little girl too? Ya I don’t remember 5 seconds ago either…anyhoodles…..same situation happened again for the rain check date, except this time pink eye hit our household. SERIOUSLY?? Can we go a week without someone getting something?? Tis the season I guess. Well after meltdown city from both the girls at Target to get the medication as well as pretty stressful day in general, the last thing I wanted to do was cook. So, to the hubs delight I suggested Chipotle. Anyone that knows me knows that I really don’t like Chipotle but sometimes- just sometimes- I’ll get a wild hair and boom we are having Chipotle. Here we are the next day and what was supposed to be a leftovers night turned into a day where the hubs stayed with Pink Eye Magee and I went to a 5 hour meeting at work. You know you’re jealous. Though the hubs is 100% capable of making the greatness that is the quinoa dish, I thought I would do him a favor by throwing everything into the crockpot and having the salads already made (we have a salad with every dinner- yep love those veggies). BEST WIFE EVER, right?? Chipotle one night- meal prepping for him the next?? WINNER! The only thing he needed to do was to stir the dish to ensure it didn’t burn at the bottom- fail on getting the crockpot crockpot liners Hold the phone- have you tried them?? They are the best invention ever!! Ok back to what I was saying. So, I had never tried making this dish in the crockpot but thought it couldn’t hurt. Since it is usually a bake I added in 2 cups of chicken broth just to ensure there was enough liquid. If you don’t have the crockpot liners, you will for sure want to spray the crockpot with cooking spray to help the stickage and maybe even the liner – if you do have them – for extra protection…can I say that on the internet?? If you’re fortunate to have one of these crockpots you are the luckiest person in America- if not, I do think it is more of a Saturday/ Sunday I am home and can watch it kind of meal- kind of defeats the purpose – sorry……so I guess I’ll give you both versions. You’re welcome. Originally, I said I was going to make “Chicken Cream Cheese Green Enchilada Bake” but I had ground beef, not chicken, and after making it, I realized the cream cheese isn’t necessary- just an added calorie so meh I didn’t include it in the below recipe. Feel free to add if you want though…I won’t judge.

The hubs and I both agreed that this lil diddy turned out awesome and tasted like the inside of a bean burrito- hints its name.

Inside a Bean Burrito:

Ingredients:

  • 1lb lean ground turkey – or beef which ever you choose- or ground chicken
  • 3 cloves garlic
  • ½ red onion diced
  • 1 ¼ cup uncooked quinoa
  • 1 LARGE can green enchilada sauce (or 2 small)
  • 2 Cups Chicken Broth
  • 1 package taco seasoning- low sodium
  • 1 can no sodium black beans
  • 1 can no sodium corn

Preparation:

  • Cook protein of choice – along with onion and minced garlic – until no longer pink – remove grease
  • Combine protein mixtures with remaining ingredients in a lined / or cooking sprayed down crockpot
  • Good on low for 3 hours – stirring occasionally.
  • Serve topped with a pinch of cheese, plain Greek yogurt and green onion

And just for sh*ts and giggles here is the oven version- slightly different

Green Chili Quinoa Enchilada Bake:

Ingredients:

  • 1 cup uncooked quinoa
  • 1 LARGE can green enchilada sauce (or 2 small)
  • ½ red onion diced
  • 1lb lean ground turkey – or beef which ever you choose- or ground chicken
  • 1 package taco seasoning- low sodium
  • 1 can no sodium black beans
  • 1 can no sodium corn
  • 1 cup Mexican cheese blend

Preparation:

  • Cook quinoa per package
  • Cook protein of choice until no longer pink – remove grease
  • In a large mixing bowl combine cooked protein, quinoa, onion, drained black beans and corn, and taco seasoning
  • Once combined add in enchilada sauce
  • Grease a 9×11 pan and pour mixture in –  top with cheese
  • Cook COVERED with tin foil for 30 minutes
  • UNCOVER and cook for an additional 15 minutes
  • Serve topped with plain Greek yogurt and green onion
